Los chiles en nogada es un platillo que se cocina normalmente durante las fiestas patrias, pues tiene los vistosos colores de nuestra bandera; el blanco de la nogada, el rojo de la granada y el verde del perejil.<\/p>\n<p>Cuentan que a las monjas agustinas se les encarg\u00f3 un platillo para Agustin de Iturbide, quien pasar\u00eda a Puebla en su regreso a la Cd. de M\u00e9xico despu\u00e9s de la firma del Tratado de C\u00f3rdoba, donde se reconoc\u00eda la independencia de M\u00e9xico por parte de la corona espa\u00f1ola. A mi me sigue intrigando c\u00f3mo fue que se les ocurri\u00f3 toda esa gama de ingredientes y la combinaci\u00f3n de los mismos para lograr tan peculiar platillo\u2026 Mi hermana y yo tenemos nuestra propia teor\u00eda: Estaban haciendo un postre, el jerez flu\u00eda al calor de la cocina y una de ellas erradamente agrego la carne a la olla\u2026 todav\u00eda falta definir que hac\u00edan los chiles ah\u00ed.<\/p>\n<p>Es conveniente preparar los chiles en nogada durante julio-septiembre, ya que es en estas fechas cuando los ingredientes se pueden encontrar m\u00e1s f\u00e1cilmente y con mejor calidad. Aqu\u00ed la receta y espero los disfruten.<\/p>\n<p><strong>Ingredientes:<\/strong><\/p>\n<ul>\n<li>20 chiles poblanos, lavados, asados, pelados y desvenados<\/li>\n<li>1\/2 Kg Molida de Puerco<\/li>\n<li>1\/4 Kg Molida de Res<\/li>\n<li>*Solicitar que se muela dos veces<\/li>\n<li>3-4 manzanas (de la manzana peque\u00f1a que es dura y muy dulce)<\/li>\n<li>6 peras (pera cafe que es peque\u00f1a)<\/li>\n<li>8 duraznos criollos peque\u00f1os (buscar los duraznos duros)<\/li>\n<li>30 almendras sin piel<\/li>\n<li>1 platano macho (no muy maduro)<\/li>\n<li>125 gr de nueces<\/li>\n<li>150 gr de pi\u00f1ones rosas<\/li>\n<li>125 gr pasas<\/li>\n<li>1 acitron<\/li>\n<li>1\/2 taza de jerez dulce<\/li>\n<li>1 cebolla picada<\/li>\n<li>2 ajos peque\u00f1os picados<\/li>\n<li>1 jitomate grande (picado y sin piel)<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3n:<\/strong><\/p>\n<p>Se caliente un poco de aceite y se agrega la carne, cuando empieza a soltar el jugo se agrega la cebolla, el ajo y el jitomate, la mezcla se tapa y se deja a fuego lento durante 30 min.<\/p>\n<p>Posteriormente se ira agregando la manzana, platano, almendra, etc. Se estar\u00e1 moviendo continuamente a fuego lento hasta que toda la fruta suelte su jugo (30 min aprox.). Finalmente se agrega el jerez y se deja enfriar. Con esta mezcla se rellenan los chiles poblanos.<\/p>\n<p><strong>Ingredientes nogada:<\/strong><\/p>\n<ul>\n<li>2 tazas de nuez de castilla pelada (se deber\u00e1 retirar tambi\u00e9n el pellejito caf\u00e9 de la nuez, la nuez debe quedar completamente blanca, esto se puede hacer m\u00e1s f\u00e1cil si se remoja la nuez en agua caliente. En algunos lugares en Puebla, se puede conseguir la nuez completamente pelada)<\/li>\n<li>3\/4 partes de queso Philadelphia<\/li>\n<li>1\/4 parte de queso de cabra<\/li>\n<li>1 bolillo grande remojado en leche tibia<\/li>\n<li>1 pizca de canela molida<\/li>\n<li>2 cucharadas de az\u00facar<\/li>\n<\/ul>\n<p>Todo se licua y se sirve sobre los chiles rellenos. Los chiles se adornan con hojitas de perejil y se espolvorean con granos de granada roja. La nogada debe prepararse justo antes de servirse ya que es una mezcla delicada que se puede echar a perder muy r\u00e1pido.<\/p>\n<p>Nosotros normalmente acompa\u00f1amos este platillo con una crema de elote o una sopa de hongos.<\/p>","protected":false},"excerpt":{"rendered":"<p>Aunque justo haya terminado la temporada, les comparto el que sin lugar a dudas es uno de mis platillos favoritos, CHILES EN NOGADA.
